Crispy Cracker Crust Pork

Crispy Cracker Crust Pork - CrossFit Fringe

Healthier Crusted Pork? Yes, please.

Breaded pork cutlets or chops are definitely a nostalgic recipe for a lot of us. So when looking to replicate an old favorite a little healthier, we think we’ve found just the ticket — Crispy Cracker Crust Pork.

Why it works

When fried, the woven Triscuit (or similar) cracker crumbs tend to brown fairly quickly. We have found that boneless center-cut pork chops work best as they cook decently quickly, meaning the cracker crumbs won’t burn before they are done cooking. We’ve used both cutlets and chops. If you’re using pork chops, look for center-cut pork chops that are ½ to 1-inch thick. Those work the best for even cooking.
