30-Minute Instant Pot Buffalo Chicken Chili

This Buffalo chicken chili is a macro-friendly twist on a classic chili that is warm, and hearty, with just a little kick of spice. Packed with protein, it’s a fast and easy recipe that can be made in Instant Pot or Slow Cooker, or frozen for later!

Ingredients

2 stalks of celery, chopped
2 green onions, chopped
1 can of black beans
1 can of northern white beans
1 can tomatoes
1 bag of frozen corn
1 cup chicken broth
1/2 cup buffalo sauce
2 teaspoons garlic powder
2 teaspoons celery salt
2 teaspoons onion powder
1 teaspoon parsley
4 ounces cream cheese
1 pound boneless chicken, cut into pieces

Optional Toppings:

Green onions
Bleu cheese crumbles
Nonfat Greek yogurt

Instructions

  1. Dump all of the ingredients into your pressure cooker in no particular order. 
  2. Seal the lid. 
  3. Pressure cook for 20 minutes. 
  4. You can let it naturally release or vent right away – the longer it rests, the more flavorful it gets.
  5. Remove the lid and serve! 
  6. Note: For the slow cooker, adjust the cooking time to 4-6 hours on low.
