Fruit Sorbet

It’s summer fruit season! When you have an abundance of summer fruits in your kitchen, sorbets are definitely the answer. You don’t even really need a recipe — just a basic template to follow, and some creativity.

Ingredients

8 ounces of fruit of choice (cut into bite-sized or 1 1/2-inch cubes)
3-4 tablespoons maple syrup
A squeeze of lemon juice

Instructions

  1. If using fresh fruit, cut whole fruits into 1/2-inch cubes (except raspberries – they can be frozen whole).; Lay out fruit in a single layer on parchment paper-lined baking trays.
  2. Freeze fruits completely. Store in freezer bags.
  3. Weigh out 8 oz frozen fruit (~1 1/3 cup) and place in a small food processor or blender.
  4. Pulse to crush the fruit into small pieces, then add maple syrup 1 tbsp at a time, adjusting for preferred sweetness and texture.
  5. Add a squeeze of lemon (*omit for acidic fruits like pineapple) and run the blender for a few seconds to mix.; Serve immediately or store in the freezer until you’re ready.
