If you’ve never heard of morning glory muffins before, they are hearty muffins that are packed with fruits and veggies. They can also be customized very easily with a few swaps or different proportions. You can even swap out ingredients in a single batch to satisfy everyone’s preferences.

Morning Glory Muffins – Filled with oats, fruits, and veggies, these cinnamon-kissed Morning Glory Muffins taste like cake, and you can customize them very easily with a few swaps or different proportions. – whole wheat flour, oats, brown sugar, melted butter, grated carrots, grated apple, dried craisins (cranberries), eggs, vanilla, ground cinnamon, baking soda, ground nutmeg, ground cloves, salt, , Preheat oven to 375. Grate the carrots and apple. Set aside. ; Add flour, oats, salt, and spices together in a large mixing bowl.; Mix butter, brown sugar, eggs, and vanilla together.; Add wet ingredients to dry mixture, carrots, apples, and dried cranberries. Mix until combined.; Pour into a greased 12 serving muffin tin. ; Bake at 375 for 22-24 minutes. ; Allow to cool completely. To store for the week, place morning glory muffins in an airtight container or sealable bag. The muffins will keep for about 3 days at room temperature, or about a week in the fridge. To freeze, cool completely then place in an airtight container or freezer bag and store. They will keep for a couple of months in the freezer. To reheat, place in the microwave or toaster oven and heat until warm.
