Morning Glory Muffins

These Morning Glory Muffins are our very favorite variety. Filled with oats, fruits, and veggies, these cinnamon-kissed muffins taste like cake.

What are Morning Glory Muffins?

If youve never heard of morning glory muffins before, they are hearty muffins that are packed with fruits and veggies. They can also be customized very easily with a few swaps or different proportions. You can even swap out ingredients in a single batch to satisfy everyone's preferences.

Morning Glory Muffins are a great way to use up kitchen leftovers! Here are a few of our favorites:

  • Grated orange
  • Coconut flakes
  • Crunchy walnuts
  • Raisins
  • Dried cherries
  • Walnuts
  • Pecans
  • Pineapple
  • Pumpkin seeds

Morning Glory Muffins

Ingredients

cup whole wheat flour
cup oats
cup brown sugar
cup melted butter
cup grated carrots
cup grated apple
cup dried craisins
2 eggs
1 tablespoon vanilla
2 teaspoon ground cinnamon
2 teaspoon baking soda
1 teaspoon ground nutmeg
1 teaspoon ground cloves
1/2 teaspoon salt

Instructions

  1. Preheat the oven to 375.
  2. Grate the carrots and apple. Set aside.
  3. Add flour, oats, salt, and spices together in a large mixing bowl.
  4. Mix butter, brown sugar, eggs, and vanilla together.
  5. Add wet ingredients to dry mixture, carrots, apples, and dried cranberries. Mix until combined.
  6. Pour into a greased 12 serving muffin tin.
  7. Bake at 375 for 22-24 minutes.
  8. Allow to cool completely. Store in an airtight container in the fridge or freezer.
  9. Enjoy!
