Who says Pumpkin Spice has to be only for Lattes?

You can get your pumpkin fix with these Pumpkin Spice Overnight Oats. Just a couple of minutes the night before and you have an awesome fall-inspired breakfast that will keep you full and happy all morning.

What are Overnight Oats

Overnight oats are oatmeal that you prep and refrigerate/rest overnight vs cooking on the stove or in the microwave. You eat them cold like pudding in the morning (hence the name!) or you can heat them in the microwave.

Pumpkin Spice Overnight Oats

Get your pumpkin fix with these Pumpkin Spice Overnight Oats. Just a couple of minutes the night before and you have an awesome fall-inspired breakfast that will keep you full and happy all morning.

Ingredients

1/3 cup plain Greek yogurt                  
1/2 cup (heaping) rolled oats  
cup unsweetened milk of choice
cup plain pumpkin puree  
teaspoon vanilla extract
0-2 tablespoons maple syrup (or honey)
1 tablespoon chia seeds
1 teaspoon pumpkin pie spice          

Instructions

  1. Mix together Greek yogurt, milk, pumpkin puree, vanilla, and 1 tablespoon maple syrup until well combined.
  2. Stir In oats, chia seeds, and pumpkin pie spice.
  3. If you want It sweeter, add another 1 tablespoon maple syrup.
  4. Pour Into a glass jar or container, seal, and place In the fridge for at least 4 hours, but preferably overnight. Serve cold or heated in the morning.

Prep: 5 minutes | Total: 5 minutes
