Buffalo Chicken Casserole

Looking to pack more protein into your prep this week, or use up some leftover staples? This casserole is the perfect thing to make for an easy weeknight dinner, a potluck, or even the Super Bowl. It packs an amazing 32g of protein per serving, and if you like even more kick, feel free to add more buffalo sauce!

Buffalo Chicken Casserole

This is one of our favorites, and one of the easiest recipes to make in a hurry, or anytime really! You only need a single casserole dish and a handful of ingredients. Though, we will say, you do need to have some shredded chicken and spaghetti squash on hand. If you dont, thats ok, just cheat! Grab a rotisserie chicken before starting and pull all that delicious meat off the bone for use in the casserole. And in lieu of the spaghetti squash, grab some fresh or frozen zoodles for your veggie base.

Ingredients

3 cups cooked spaghetti squash
2.5 cups cooked shredded chicken
1/2 tbsp olive oil
1 egg
1/2 tsp onion powder
1/4 tsp black pepper
1/2 tsp garlic powder
1/3 cup Franks Buffalo Sauce (or any buffalo sauce)
1/2 cup blue cheese crumbles (optional)

Instructions

  1. Preheat the oven to 400 degrees
  2. Combine all spices, oils, and sauces in a bowl and thoroughly mix
  3. Add in shredded chicken and veggie noodle base - coat all surfaces
  4. Pour the combined ingredients into a glass baking dish
  5. Bake 20-25 mins, or until there appears to be a golden brown
  6. Remove, allow to cool, portion, and enjoy!

Prep: 10 minutes | Cook Time: 20 minutes | Total: 30 minutes
