Crispy Cracker Crust Pork

Healthier Crusted Pork? Yes, please.

Breaded pork cutlets or chops are definitely a nostalgic recipe for a lot of us. So when looking to replicate an old favorite a little healthier, we think we've found just the ticket -- Crispy Cracker Crust Pork.

Why it works

When fried, the woven Triscuit (or similar) cracker crumbs tend to brown fairly quickly. We have found that boneless center-cut pork chops work best as they cook decently quickly, meaning the cracker crumbs wont burn before they are done cooking. We've used both cutlets and chops. If you're using pork chops, look for center-cut pork chops that are  to 1-inch thick. Those work the best for even cooking.

Crispy Cracker Crust Pork

You won't believe how easy it is to make Crispy Cracker Crust Pork! It's the perfect pairing for veggie sides in other recipes for meal prep.

Ingredients

4 pork chops/cutlets
3 tablespoons olive oil

Breading Mixture:

14-16 woven crackers (Triscuits or Beyond Nature harvest whole wheat crackers)
teaspoon paprika
teaspoon garlic powder
teaspoon onion powder
teaspoon dried thyme
teaspoon salt
teaspoon pepper

Instructions

  1. Blend breading mixture ingredients in a food processor until crumbly.
  2. Spread the mixture on a plate.
  3. Rub a little olive oil on 2 pork chops, then bread pork chops with cracker mixture.
  4. In a large skillet, pour 1 tablespoon of olive oil.
  5. Cook pork chops for 3-5 minutes on each side depending on their thickness until they are golden brown.

Prep: 15 hours | Cook Time: 15 hours | Total: 30 minutes
